They can, but they get a little soggy when defrosted. Like any lettuce-style greens (think, arugula) that you try to freeze. Remember to pull out the whole root! It’s all edible.
It’s interesting what we classify as a weed, isn’t it, what we’ve been taught is superfluous and unwanted? Not that you, Serena, have to specifically appreciate dandelions, but it makes me wonder how many other beautiful and nutritious weeds, literal and metaphorical, I’m bypassing.
So true! It’s like I would trust the dandelions more if I had to buy them from the grocery store than pick them in a field… which shows the ways I’ve been shaped by my culture!

Purslane is also a good foraging food - very nutritious and found between cement - but dandilions are a good one!
